I recently had the pleasure of trying Ramen Takeuma and I have to say, it was an amazing experience. They were able to accomodate us two days before despite the massive number of reservations. First, the ramen. The broth was rich, savory, and had a nice balance of flavors. But what we enjoyed the most was the chicken. I have to say, it was some of the best I've ever had. The dish was beautifully presented and it was a pleasure to eat with my eyes as well. The wasabi mayo added a nice kick of heat and a tangy, creamy flavor to the dish. The combination of the crispy fried chicken with the wasabi mayo was a perfect marriage of textures and flavors. Tip: Go to their Instagram and make sure you're updated with their pop-up dates as they only cater several times a year.

Focusing on one style of ramen has worked in the favour of Ramen Takeuma; the broth was full of umami, a good size portion of chasu, tasty wood ear mushrooms, slurp-able noodles and one of the best marinated soft boiled eggs I've ever had in a bowl of ramen. Meanwhile the tatsuta-age (deep fried chicken) was just the right amount of crispy, a generous serving and well seasoned. Another highlight of the meal was the honey wasabi mayo dipping sauce served with the chicken. It was unique experience to have a delicious Japanese meal while at a curling club in Winnipeg. After the meal Chef Kawazu introduced himself and was very kind - it was interesting to hear the story of how they decided to pursue ramen making. We will definitely be back and here's to hoping the success of these pop-ups will eventually lead to Ramen Takeuma becoming a permanent restaurant in the city.

Pretty sure this is one of the only legit ramen places in the city, and it's definitely (imo anyway) the best one. The broth is rich without being heavy, and the toppings are probably the most I've enjoyed on any ramen, anywhere (outside of Canada included. Those crunchy mushrooms are really something else). He sometimes has other items on his menu as well which I recommend trying out, such as Japanese-style fried chicken (which my friend absolutely loves) and the umeshot (which I absolutely love). It might seem pricey but honestly, this guy is making stuff from scratch; the broth alone is apparently a two-day process. Especially with the cold weather setting in, I would say do yourself a favour and make a reservation. Nothing quite like a delicious, warm bowl of noodles when it's freezing out. PSA: this is a popup restaurant and the location changes every now and then. Instagram is the best way to keep track of updates. :)
